Difficult to know. There weren't any supermotos racing last year and without race data, its difficult to know correct gearing.

For lightweight bikes around 40hp (Ninja 300, Yamaha R3), something around 56 rear and 17 front is pretty close. This is with a 415 chain. This gives a final drive ratio of 3.29. If you're using a larger chain, just divide the number of rear sprocket teeth by the number of front sprocket teeth to get the final drive ratio.
It's difficult to make a prediction for another style of bike without knowing the primary drive ratio. I expect the primary drive of a dirtbike/supermoto is quite a bit different than a Ninja 300 or Yamaha R3. These bikes hit about 170km/h on the straight, so you would need gearing that gets you that speed without hitting the limiter.

I hope this helps a bit. With the torque of a supermoto, I expect you could run taller gearing than a lightweight bike.
